Ingredients

Pesto Mayo:

Add garlic to shopping list 1 clove garlic

Add fresh basil leaves to shopping list 1/2 cup fresh basil leaves

Add slightly toasted pignoli nuts (pine nuts) to shopping list 2 teaspoons slightly toasted pignoli nuts (pine nuts)

Add Parmesan cheese to shopping list 2 Tablespoons Parmesan cheese

Add mayonnaise to shopping list 1/2 cup mayonnaise

Sandwich:

Add baguette, cut into 4 portions then sliced in half to shopping list 1 baguette, cut into 4 portions then sliced in half

Add tomatoes, each cut into 4 slices to shopping list 2 tomatoes, each cut into 4 slices

Add grilled chicken breasts to shopping list 4 grilled chicken breasts

Add avocado, peeled and cut into 8 slices to shopping list 1 avocado, peeled and cut into 8 slices

Add crispy bacon to shopping list 8 slices crispy bacon

Directions:

Pesto Mayonnaise:
Place the garlic, basil and pignoli nuts in a food processor. Process until fine. Spoon into a bowl. Add the cheese and mayonnaise and stir. (Makes 1/2 cup)

Sandwich:
Spread each baguette half with 1 tablespoon of the pesto mayonnaise.

Place two slices of tomato on top of each of the four bottom halves. Add a chicken breast, two avocado slices, two slices of bacon and bread top. Serve immediately.
