Tutti-Frutti Waffles

Yield: 6-7 waffles

Ingredients

Add biscuit/baking mix to shopping list 2 cups biscuit/baking mix

Add eggs, lightly beaten to shopping list 2 eggs, lightly beaten

Add vegetable oil to shopping list 1/2 cup vegetable oil

Add club soda to shopping list 1 1/3 cups club soda

Add crushed pineapple, drained to shopping list 1/4 cup crushed pineapple, drained

Add chopped pecans to shopping list 1/4 cup chopped pecans

Add fresh raspberries, optional to shopping list 1 pint fresh raspberries, optional

Add medium ripe bananas, sliced, optional to shopping list 2 medium ripe bananas, sliced, optional

Directions:

In a mixing bowl, combine biscuit mix, eggs and oil. Add soda and stir until smooth. Gently fold in pineapple and pecans. Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Top with raspberries and bananas if desired.
