Layered Reuben Salad

Yield: 4 to 6 servings

Ingredients

Add cabbage, finely shredded to shopping list 2 cups cabbage, finely shredded

Add lettuce, finely shredded to shopping list 2 cups lettuce, finely shredded

Add Thousand Island dressing, divided to shopping list 1 cup Thousand Island dressing, divided

Add caraway seed to shopping list 1 teaspoon caraway seed

Add cooked deli corned beef, sliced and chopped to shopping list 8 ounces cooked deli corned beef, sliced and chopped

Add hard cooked eggs, sliced to shopping list 3 hard cooked eggs, sliced

Add Swiss cheese, shredded to shopping list 4 ounces Swiss cheese, shredded

Directions:

In a large bowl, combine cabbage, lettuce, 1/4 cup dressing and caraway seed. Place half of the mixture in a medium bowl.

Layer half of the corned beef, remaining cabbage mixture, remaining corned beef, egg slices and cheese. Spread remaining dressing evenly over top of salad. Cover tightly with plastic wrap and chill for 24 hours.
