Salsa Potato Salad

Yield: 7 servings

Ingredients

Add mayonnaise to shopping list 1/3 cup mayonnaise

Add sour cream to shopping list 2 tablespoons sour cream

Add salsa to shopping list 1/4 cup salsa

Add minced, fresh parsley to shopping list 1 tablespoon minced, fresh parsley

Add potatoes, cooked and unpeeled to shopping list 3 cups potatoes, cooked and unpeeled

Add celery stalk, thinly sliced to shopping list 1 celery stalk, thinly sliced

Add onion, chopped to shopping list 1/4 cup onion, chopped

Add cheddar cheese, shredded to shopping list 1/2 cup cheddar cheese, shredded

Directions:

In a bowl, combine the mayonnaise, sour cream, salsa and parsley.

In a large bowl, combine the potatoes, celery and onion. Add dressing and toss to coat. Stir in cheese.

Cover and refrigerate for at least 1 hour to blend flavors before serving.
