Southwest Pork Chops With Salsa

Yield: 4 servings

Ingredients

Add white wine vinegar to shopping list 1/4 cup white wine vinegar

Add fresh cilantro, snipped to shopping list 3 tablespoons fresh cilantro, snipped

Add olive oil to shopping list 1 teaspoon olive oil

Add frozen whole kernel corn, thawed to shopping list 1 cup frozen whole kernel corn, thawed

Add plum tomatoes, chopped to shopping list 3 plum tomatoes, chopped

Add green onions,thinly sliced to shopping list 1/2 cup green onions,thinly sliced

Add jalapeno pepper, seeded and chopped to shopping list 1 jalapeno pepper, seeded and chopped

Add center cut loin pork chops to shopping list 4 center cut loin pork chops

Directions:

Combine 3 tablespoons of vinegar, 1 tablespoon of cilantro and olive oil.

In a medium bowl, combine corn, tomatoes, green onions, jalapeno, remaining vinegar and cilantro; set aside.

Grill chops over medium heat for 11-14 minutes, turning once, and marinating with oil and vinegar mixture. Serve with salsa.
