Ingredients

Add medium tart apples, peeled and quartered to shopping list 18 medium tart apples, peeled and quartered

Add apple cider to shopping list 1 cup apple cider

Add sugar to shopping list 3/4 cup sugar

Add lemon juice to shopping list 2 Tablespoons lemon juice

Add cinnamon stick to shopping list 1 cinnamon stick

Add ginger to shopping list 1 teaspoon ginger

Add vanilla to shopping list 1 teaspoon vanilla

Add nutmeg to shopping list 1/2 teaspoon nutmeg

Add mace to shopping list 1/2 teaspoon mace

Add cardamom to shopping list 1/2 teaspoon cardamom

Directions:

Place all ingredients in large saucepan. Cover and cook over medium low heat for 40 minutes or until apples are tender. Remove from heat; discard cinnamon stick. Mash the apples to desired consistency. Serve warm or chilled.
