Southwest Omelet

Ingredients

Add large eggs to shopping list 4 large eggs

Add tomatoes, chopped to shopping list 2 tablespoons tomatoes, chopped

Add red bell pepper, chopped to shopping list 2 tablespoons red bell pepper, chopped

Add onion, chopped to shopping list 2 tablespoons onion, chopped

Add black bean and corn salsa to shopping list 1 tablespoon black bean and corn salsa

Add Mexican Blend shredded cheese to shopping list 1/4 cup Mexican Blend shredded cheese

Add sour cream to shopping list 1 tablespoon sour cream

Directions:

Spray a skillet with nonstick spray.

Beat the eggs. Add tomatoes, red pepper and onion. Pour into the skillet and lightly cook.

While cooking the other side, spread salsa over the omelet; then add most of the cheese.

Fold over and place the remaining cheese on top. Serve with a dollop of sour cream for added flavor.
