Cool Tuna Salad Pepper Cups

Yield: 4 servings

Ingredients

check large green peppers 2 large green peppers

2 cans (6 ounces each) tuna, drained and flaked

check medium cucumber, chopped 1 medium cucumber, chopped

check small onion, chopped 1 small onion, chopped

check mayonnaise 1/2 cup mayonnaise

check pickle relish 1/4 cup pickle relish

Directions:

Cut green peppers in half lengthwise; remove seeds and membranes.

In a bowl, combine tuna, cucumber, onion, mayonnaise and relish. Spoon into pepper cups. Serve immediately.
